CHEESE

CHEESE SPREAD OR DIP

This makes about 2 cups - you can cut the quantities in half.

8 ounces cottage cheese
1 stick of unsalted butter at room temperature
1 Tablespoon sweet Hungarian paprika
Ground pepper to taste
1/4 teaspoon salt
2 teaspoons caraway seeds
1 teaspoon dry mustard (ok to substitute 2 teaspoons Dijon)
1 teaspoon drained chopped capers
1 Tablespoon finely chopped onions
1/2 cup sour creme (add 1/4 cup more if you want a dip)
3 Tablespoon chopped chives or the green ends of scallions

Place the cottage cheese and softened butter in a medium bowl and mix together with a wooden spoon or mixer (you can also toss everything into a Cuisinart)
Add the remaining ingredients and mix well, adding the extra sour creme if you want a dip. Refrigerate and decorate with the chives. Serve with crackers
